Shiitake "Pulled Pork" Sliders

Prep Time: 15 minutes
Cook Time: 20 minutes
Yield: 4 servings


  • 1 tablespoon avocado oil
  • ½ cup diced onion
  • 4 ounces slice shiitake mushrooms
  • 1 clove garlic, minced
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/4-1/2 cup BBQ sauce
  • salt and pepper, to taste
  • 1 cup shredded green cabbage
  • 1 cup shredded purple cabbage
  • ½ cup grated carrot
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • salt and pepper, to taste

+ 8 Slider Buns


  1. Heat a non-stick skillet over medium high heat.  Add oil, onions and mushrooms.
  2. Sauté for 6-8 minutes until mushrooms and onion begin to soften.
  3. Add garlic, apple cider vinegar, smoked paprika and BBQ sauce.
  4. Reduce heat to medium and cover with a lid.
  5. Cook for 8-10 minutes or until mushrooms are completely tender.  Season with salt and pepper.  Set aside.
  6. Mix together slaw ingredients in a small bowl and toast slider buns in oven at 400 F until lightly crisp.
  7. Top each toasted slider with 2 tablespoons mushroom mixture and ¼ cup slaw.
